New Zealand Rosemary Lamb Shanks

Although this recipe specifically uses New Zealand lamb, you can freely use lamb sourced from your favorite deli shops. However, we recommend using free-range lamb for a leaner meat with more robust flavor. 

If you’re planning to serve this for lunch or dinner, make sure that you allow enough time for the lamb to cook. Since this recipe uses a slow cooker, you can do other things while you wait for your meal to cook – like playing with your cat or teaching your dog a cool, new trick.

Ingredients:  

1 teaspoon salt
3/4 teaspoon pepper
4 lamb shanks (about 20 oz each)
1 tablespoon butter
1/2 cup white wine
3 medium parsnips, peeled, cut into 1-inch chunks
2 large carrots, peeled, cut into 1-inch chunks
2 medium turnips, peeled, cut into 1-inch chunks
2 large tomatoes, chopped
1 large onion, chopped
4 garlic cloves, minced
2 cups beef broth
1 package (10 oz) frozen peas, thawed
1/3 cup chopped fresh parsley
2 tablespoons minced fresh rosemary

Fun Fact: Did you know? Many cats are attracted to rosemary and will rub their fur against the shrub to release its wonderful aroma. Rosemary is rich in vitamins A and C, iron, calcium, folate, manganese, and powerful antioxidants which makes this herb really good for them. Add a small serving of chopped fresh rosemary to your cat’s food for a more nutritious and appetizing meal (just like Wishbone Pasture for cats!).  

Cranberry Lamb

It’s not Thanksgiving yet, but you can enjoy the harmonious blend of tangy cranberries and tender lamb all year round with this recipe. If it is difficult to get fresh cranberries this time of the year, dried ones will work just fine. You’re sure to love the sweet and savory aroma filling up your house as you bake this mouthwatering recipe.

Ingredients:  

2 cups fresh cranberries or 1 cup dried cranberries
3 tablespoons cranberry jelly
1 cup red wine
2 cups chicken stock
3 tablespoons balsamic vinegar
1 tablespoon brown sugar
2 onions, peeled and sliced into rings 
5 sprigs of fresh rosemary
1 shoulder of lamb (6-7 lbs)
coarse black pepper, to taste
4 cloves garlic, sliced
1/2 cup fresh mint, chopped
kosher salt, to taste

Fun Fact: Fresh or dried, dogs love the sweet and tangy taste of cranberries! Not only these red berries are low in calories and sugar content, but cranberries are also high in vitamin C, manganese, potassium, and strong antioxidants. Give cranberries to your dogs as a treat or give them Wishbone Pasture for dogs so they can enjoy an appetizing, balanced meal!
